Ever think of the perfect breakfast? You know the one you make for yourself when you have time to sit about? I have two breakfast ideas that come to mind. One is biscuits and gravy. To be specific my dad’s biscuits and gravy, but my recipe is close here. The second is eggs, toast, breakfast potatoes, and grits.
In my world spicy things make everything nice. Hot sauce, dried red pepper flakes, black pepper, and cayenne pepper.
So, when I threw these potatoes in the skillet I was thinking of Louisiana. My family lived there when I was a child, and it’s my happy place. I just remember having lots of fun playing, eating delicious food, and Mardi gras. I’m hoping that Emery and I will be able to vacation there one day soon.
A little side note… Mardi Gras celebrations are starting on Fat Tuesday, or February 13th this year. Maybe a King Cake, Fritos pie, red beans and rice, jambalaya might need to be added to the blog’s recipe list in celebration!
In the meantime I’ll just have to make things like this. Cajun breakfast potatoes with ham are seasoned with the basics of Louisanna cooking… onions, green peppers, black pepper, garlic, and a little Cajun seasoning to light your taste buds on fire. Ewwww-weee… my little homage to Justin Wilson the great American Cajun chef.
However, if you’re not into spicy foods cut the Cajun seasoning back or omit it all together. Cajun cooking is about extracting the most flavor from the foods you’re cooking, and actually without too much seasoning, plus bonus points if you use what you have without wasting anything!
With that being said, I’ve also made these with red bell peppers and added green onions for a little garnish too. These potatoes are so versatile and can made anyway you like. They’re equally as good with bacon instead of ham, meatless, or just with onions.
Some of the Louisiana seasonings I like are SLAP YA MAMA Cajun Seasoning and TONY CHACHERE’S Famous Creole Seasoning.
Cajun Breakfast Potatoes with Ham
- 4 cups of cooked potatoes chopped (2 medium Russet)
- 1 medium onion diced
- 1/2 bell pepper diced
- 2 cloves garlic sliced or smashed
- 2 tablespoons vegetable oil
- 1/2 cup of chopped ham
- Salt and pepper to taste
- Cajun seasoning to taste
- 2 teaspoons of dried parsley
- Step 1 Microwave potatoes until tender and chop when cool.
- Step 2 Heat oil over medium high heat.
- Step 3 Add onions, peppers, garlic, ham to the pan. Sautee until onions have softened about 3 minutes.
- Step 4 Add potatoes and continue cooking while flipping over till slightly browned.
- Step 5 Season with Cajun seasoning, salt & pepper, and garnish with parsley.
- Step 6 Enjoy.
